DR. KEIKO SHIRAI

I have been a professor (Titular C highest level) at Universidad Autonoma Metropolitana, Mexico City, since April 1999. I am a member of the Mexican Researchers Council (SNI) since 1996. Currently Researcher Level 3 (the highest). I have been in charge of several R&D projects, where I developed lactic acid fermented products which had applications for the reduction of antinutrional factors, and recovery of added-value products, such as biopolymers, enzymes and chemical compounds.

I have supervised 11 PhD students, 21 MPhil, numerous trainees of Bachelor degree and postdoctoral students. I have published 55 articles in several international peered-reviewed journals (h-index=16), filed 6 patents, participated in 2 book chapters, and I have given more than 60 oral conferences (12 as invited speaker).

I am a regular reviewer for the Mexican Council for Science and Technology (CONACYT) and many international journals of my field of expertise. My areas of research are: 1) the use of microorganisms and enzyme for obtaining added value products such as proteins, 2) biopolymers, 3) physico- chemistry of natural polymers, 4) formulation and biological molecules interactions. My current research subjects are focused on the elaboration and the characterization of materials based on polysaccharides originated from biomass.

My aim is to work in a challenging, constantly evolving, team-based environment that enables personal development coupled with the opportunity of learning.
